Pancakes with Magic Buttermilk Sauce

A few weeks ago, I put this picture on Instagram:

A discussion followed on Facebook about my needing to post recipes on my blog, which led to a discussion about the futility of this for the following reasons:

1. I am way too lazy to take step-by-step pictures of the food I cook.

2. I have three children. A normal meal prep includes refereeing arguments, answering the question “What are we having for dinner?” more times than is ever necessary, replacing batteries on random electronic equipment and keeping baby sister from EATING RAW BREAD DOUGH (gag). Why would I add staged photography to this?

2. I make essentially the same things every week.

3. Nothing I make is all that special (says the girl who just titled this post with “Magic Sauce”).

4. Almost anything I cook is either stupid simple or found on the internet (from legit food blogs with fancy step-by-step pictures).

5. I only take pictures of pretty things I make. No one wants to see the standard pb&j with cut up fruit we eat every other day for lunch. Or the very basic tacos I make for dinner.

6. Just because I’m good at something (I do know my way around a kitchen) doesn’t mean I want to write about it all the time.

However, one of my friends suggested I link up recipes from the food I’ve made for the week. I liked this idea. One, I like to give lots of love to bloggers putting their time in the trenches, trying to make a name for themselves in this scary internet world. Two, I do love me some food. So, here you go.

My Pancake Recipe (adapted from 5 Dollar Dinners) *

1 cup whole wheat flour
1 cup all purpose flour
2 T brown sugar
2 tsp baking powder
1 tsp baking soda
dash cinnamon
1/2 tsp salt
1 and 3/4 cup milk
1 tsp vanilla
1 egg
2 T oil

In mixing bowl, stir together flours, powder, soda, cinnamon and salt. Whisk in milk, then vanilla, then egg and oil. Pour batter onto hot griddle into 1/4 to 1/3 cup portions. Allow bubbles to form then flip. Cook 1-2 minutes on the flip side.

Magic Sauce **

1/2 cup butter
1 cup buttermilk
1 cup sugar
1 tsp vanilla
1 tsp baking soda

In a large sauce pan (This stuff grows. I use a 3 quart sauce pan.) heat buttermilk, sugar, and butter, stirring together until boiling. Allow to boil one minute, then turn off the heat and add vanilla and baking soda. Again, the sauce will bubble and grow. Be prepared. Stir continuously for about a minute. Return to low heat to keep warm. Pour over hot pancakes.

**This recipe comes from a church cookbook. Although I have seen a version of it here, and also a chocolate version here (which totally proves my point about the futility of me writing a food blog).

  1. Yay! I’m so excited to try this. Thanks for posting…and I think links to blogs with pretty pics is an excellent idea. That’s basically what pinterest is and I use it all the time. I’m all about letting other, more organized and creative people do the hard work for me:-)
